Turning Another Year Older - Who Wants Cake?

Pretty sure my other half is about to have a mid life crisis.
He turned 35 this weekend and he's already convinced his life is over.  He isn't taking it well.
He woke up, walked down stairs slowly, proceeded to tell me he had to get up 3 times during the night to pee (forgetting that he drank a whole bunch of pop and water just before bedtime), complained his legs hurt (possibly the gym?) and couldn't remember where he put his phone (attached to his hip at all times).
It's ok darling, you still have your looks.

He didn't want to celebrate this year.  Let me re-phrase, his idea of celebrating was football chicken and holing himself up in the basement to watch his games, no going out for dinner (which we do every year, no family, no presents.
Fine by me.
BUT, what's not ok is giving me the opportunity to make a cake.
He was alright with that.
"Carrot cake please, you know, with the yummy frosting."
Good pick, carrots make you see better, you'll need that at your age.

So here's to you my middle aged man, per your request!


Carrot Cake with Orange Ginger Cream Cheese Frosting
makes 2 9" round cakes
 
4 eggs
3/4 c. oil
3/4 c. brown sugar
3/4 c. granulated sugar
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 tsp. ground ginger
1 1/2 tsp. cinnamon
3 c. grated carrots
Frosting
2 pkgs. lite cream cheese
2 tsp. fresh ginger, pureed (use a zester)
juice of 1 clementine plus zest
2 c. powdered sugar

In the bowl of your stand mixer (or with a hand blender) mix together the eggs, oil and sugars until creamy.
On a low speed add in the dry ingredients and blend until fully combined.
Fold in the carrots.
Place in 2 buttered and floured 9" springform pans and bake in a preheated 350F oven for about 35-45 minutes.  Check at the 35 min mark with a toothpick to see if it comes clean.  (once it does take it out and cool on a wire rack and then remove the rings)
Frosting:
In a bowl cream the cheese until smooth.  Slowly add in the powdered sugar and juice from the clementine.  Mix in the zest and ginger until smooth and creamy.
Place in the refrigerator while the cake cools completely.
This will give you more than enough to have a layer of frosting in between the layers as well as around the cake.
