Love in a Rice Pile - Bok Choy Fried Rice

Our traditional order at a Chinese take out:
1 order general tso chicken (red sauce only!)
1 order sweet and sour pork (well not anymore since the Mr. BM is off the pig)
1 order lo mein or chow mein of some sort
sometimes an order of garlic fried bok choy
1 order chicken balls (for the Little Ugh)
1 LARGE order fried rice (sometimes 2 orders)

Yup, we're bland Chinese food eaters but I loves me some fried rice!
I can never seem to make it quite like the restaurants but I suppose that means its made slightly healthier at home.
I made this version last night along with the Ginger Lime Wings
It worked out beautifully!

Bok Choy Fried Rice
4 servings

4-6 baby bok choy, rinse
1 c. long grain rice
2 c. water
2 tbsp. soy sauce
3 small shallots, chopped
3 cloves garlic, chopped
bacon fat for frying

First you should make your rice - 2 to 1 (water to rice) and let cool.  If you have leftover rice that works too!

In a pot of boiling salted water blanch the bok choy for only a minute or two.


Remove and plunge into a big bowl of cold water (or ice bath, but I never have ice cubes)
While you are blanching chop up your garlic and shallots and put into a cast iron with a few tbsp. of bacon fat. (on low/med. heat) then pat dry and cube up the bok choy, removing the stem and add along with the garlic and onions

Toss in the rice and soy sauce, stirring to coat.  Fry about 3-5 minutes to heat through.
