Cultural Food Marriage - A Worthy Mash Up

Since its not Monday I can't call this a Mash Up Monday post even tho it is and I AM going to post it in the tab - try and stop me!

I wanted a burrito.
But I wanted to use up my chicken.
I love Mexican.
But I want to use up my cucumbers and tomatoes from the market.
I want Mexican.
No wait, I want soulvaki.
Oh I have feta.
I love Greek flavors.
Darn it....why can't my stomach/head pick one thing and stick with it!?

Eureka!
A Greek inspired burrito.
Genius. 
You'd almost think I smoke the funny green stuff with all my back and forthness (totally a word) and indecision's.
Setting the record straight - I don't, but if I did OH MAN I bet my food ideas would be even better.

This was a healthy enough meal, pretty sure I covered off all the food groups even.
A for effort and taste.
My head/stomach made the right move tonight.  I guess indecision's can work to your benefit (sometimes)

Greek Burritos

flour tortillas
3 chicken breasts, marinated for at least 30 min.
marinade for chicken:
4 cloves garlic, chopped
1/2 lemon, juiced
1/4 c. extra virgin olive oil
2 tsp. oregano (dried)
1 tbsp Greek All Purpose Seasoning

2 c. rice (I used leftover vegetable fried rice)
1 cucumber diced
1-2 tomatoes diced
feta cheese crumbles
Savory Greek Cream


Place boneless, skinless chicken breasts in a large Ziploc bag.  In a small bowl combine all of the marinade ingredients and stir.

Pour over chicken and let rest in the refrigerator for at least 30 minutes.


BBQ on med heat 7 minutes then flip for another 5-7 minutes depending on the thickness of the meat.
Watch for flare ups!
Use your time wisely here, cut up your cucumbers and tomatoes (no seeds people, no seeds) and set aside.

Crumble your feta and place in a dish


Reheat your rice (or if you are making fresh, get it done would ya?)
Cube up your chicken while your tortillas are warming (I used my cast iron pan on low/med heat)


Now you're ready to assemble.
While the tortilla is still in the pan warming, place a few spoonfuls of rice in the center, add in your feta cheese, cucumbers and tomatoes as well as chicken.  Add a few dollops of the savory whipped cream.
Fold each end towards the middle and then roll closed.
Cut in half and serve.

  1. Great twist on a burrito-greek food does not show up in my house that often but I can sure put these gems together quickly! Wonderful ingredients here-yum!

  3. Great idea! I almost always have these ingredients on hand (except for the Greek seasoning, I'll have to pick some up). I'll definitely be trying this!
