Pastry Wrapped Pears with a Vanilla Sauce of Course!

Oh my my, oh hell yes, hunny put on that party dress!  Or fat pants.
I vote fat pants, like buffet style - the ones that have drawstrings so you can loosen away when eating until you can't move.
I may or may not own a pair, that may or may not come out at holiday time, or Sundays.

Pants or no pants, if you like pears you will LOVE this dessert.
Its beautiful.
Its tasty.
And its pear, vanilla sauce AND puffy flaky pastry!  How can you NOT want to make this??

Pastry Wrapped Pears with  Vanilla Cream Sauce

Here's what you'll need:
pears
water
vanilla bean
sugar
puff pastry sheet
milk
flour
butter

First you will need to poach your pears and chill them for at least an hour.
Make sure you save your poaching liquid as you will use this to create your sauce!

Once your pears have been poached and chilled take a sheet of defrosted puff pastry and slice 1 inch strips.  Brush a touch of water on one side and sprinkle with some sugar.

You will need 2 strips per pear.
Attach the strips together pinching them and wrap one pear at a time in a spiral motion.
Tuck any excesses under the pear.

Toss onto a baking sheet and place in a preheated 400F oven until browned, about 10 minutes (maybe more I lost count - just make sure its browned)

To make the vanilla sauce:
take 1/2 your poaching liquid, scrape the vanilla pods and add the seeds, incorporate in 3/4 c. heavy cream; stir and reduce until it is a syrupy consistency.

Plate by spooning some of the sauce onto a plate, place your slightly cooled pear in the middle.
