MashUp Monday - Taco Tators

Happy MashUp Monday Friends!!

This Monday started off somber, grey skies and more raindrops.  I am not even sure I remember what the sun looks like its been so long....oh wait, there it is, right by the moon which is getting brighter since its nearly 8pm.
The day itself was grand minus the rain, I spent a few hours with a dear friend, got some snuggle time in with my little monkey man, and shopped for tonight's mash up.

This evenings dinner came late late late last night while I watched re-runs of Diners Drive-Ins and Dives (this show makes me want to stop at the sketchiest of places just to see if they are good, you?).  I couldn't tell you the episode so please don't ask.  I just remember tacos (which I heart) and then some bbq joint with baked potatoes (I also heart starch) and it came to me, why not put everything to do with a taco ON my baked potato??

Some may call me mad, it could have been the fact that I was running on 3 hours sleep, but this had to be done.

This is much like a loaded baked potato only difference is this dish is a meal in itself, there is no need for a side salad or any meat product because it already incorporates everything you would need.

Taco Tators

4 russet potatoes
Olive oil
Salt and pepper
Shredded lettuce
Grated cheese
Sour cream
Green onions
Crumbled tortilla chips (optional)
Chili - instead of plain meat with salsa.  I make mine from scratch but for convenience sake you could use store bought from a can if you so desire.  But if you make your chili at least you know you have leftovers for lunch or dinner the following day :)





Wash potatoes thoroughly, pierce with a fork all over.  Rub a little olive oil all over and season with salt and pepper.
Place in a baking dish and cover with aluminum foil.

Bake in a preheated oven (400F) for about an hour or until a fork is inserted easily.

Meanwhile prepare your chili if you have the time and aren't using canned junk (sorry canned chili, I am sure you are good I just wont eat you)

In a large pot saute a medium chopped onion in a touch of veg oil.  Add in the ground beef (yes I said beef).
Once all the meat has been browned and made into small bite size pieces (I like to use a potato masher) add in a can of diced tomatoes, a can of tomato sauce, a cup of water and your spices.
*I like to stock up when we are in the States on a little package called "Carroll Shelby's" Chili Kit*.  It already has a spice blend, some salt, extra cayanne pepper and even some masa flour if you want a thicker chili!



Simmer and stir frequently while your potatoes are baking.


Once your potatoes are ready, place them on a plate, slice them in half and start adding your toppings!  Whatever you would put on your taco put on your potato.

  1. This sounds like a perfect late night meal! I must admit, that after watching DDD, I always wonder if some hole in the wall has the best ______ but I never have taken the time to see. I'll let others test it out first, and then just follow behind. Thanks for a great late night dinner idea!
